Featured Vendor | PNW Cupcakes

Cake. It's my kryptonite. I recently had an opportunity to work with Lauren, of Pacific Northwest Cupcakes based in Snohomish, WA, to not only learn more about her amazing craft and passion but to also take home one of her cakes and try it out, so you better believe it that I jumped at it!

Packaged in a 100% recycled Kraft paper box was the cutest and prettiest buttercream frosted 4" sea salted caramel flavored cake with fresh floral and roses for me to indulge in.  (GAH! My mouth is watering.)

Other than the fact that this cake tasted like heaven, I loved how simple it was.  Not only in the design, but because Lauren only uses simple, pure, and whole ingredients that are local, organic, all natural, sustainable, non-GMO, and fair trade.  If that doesn't scream PNW like the company name, I don't know what does?! 

Because of the quality of the ingredients she uses, the first thing I thought was how authentic and real the cake tasted, unlike the store bought cakes that always seem to make one's stomach hurt - am I right or what? I'm still remembering how delicious it was - moist, fluffy, yet and slightly salty and not too sweet! The caramel drizzle was to die for and the buttercream frosting...buttercream frosting is my fave, but I love that she did just a light layer of it in sort of a "naked cake" style.  As much as I love buttercream frosting, I like to have a little cake with my frosting. :)

Needless to say, I think she nailed it across the board.  I absolutely loved it from first bite to last, from design to taste.  It was simple, beautiful and most importantly DELICIOUS!  -And I almost forgot to mention that almost everything can be made gluten free and vegan! (Drop. The Mic.)
